This is a very thin pan, and with the acrylic cook-top we have it performs very very poorly. I wouldn't purchase this again. Heats very unevenly.

I normally try to cook with Le Creuset or non-coated stainless clad aluminum whenever possible, but for eggs and some fish preparations a quality non stick pan is essential. This particular line of Cuisinart pans is thick anodized aluminum with a teflon like interior. In addition, the one piece cast handle is considerably more comfortable than All-Clad's and quite elegant as well. I have both the 10" and the 8"; the 8 being perfect for a couple eggs with enough room to separate the two and turn without flipping one on top of another. The only negative, and it's a small one, is that the skillet has a rolled lip which makes cracking the egg shell a little less than precise. A nice Cusinart touch though, is the availability of a 9" model which most individuals (as opposed to families) could get by with as their only non-stick skillet.

Throughout the reviews of this product and it's many competitors you'll find a number of gripes about early demise of the non-stick coating. My experience has been that this complaint is highly individual to how each pan (whether it's Cuisinart, All-Clad, Calphanon, etc.) is treated by it's owner. The fact is these non-stick coatings are not finite and will ultimately fail at some point. However, how you treat the pan will determine whether that time is measured in months or years. If you use teflon safe utensils (wood, nylon, silicon) and only wash the pan using the SPONGE side of a typical two sided dishwashing sponge you'll find the coating to last significantly longer.

A very nice skillet at a reasonable price.
